dc.descriptionThe best solvent for paprika oleoresin extraction was determined by comparison with a commercial oleoresin. Pigment composition was determined by HPLC. The solvent system hexane/acetone/isopropilic alcohol (3:2:1) shown to be the best for extraction of the oleoresin, giving the best yield and colour value and a chromatographic pattern identical to that of the commercial oleoresin.
