The article presents a study on the identity characterization of a territory through
gastronomy. Gastronomy is an important tourist-cultural attraction of a city, region or
country, and cultural and gastronomic heritages are largely responsible for the
representative and identification elements of a people. In methodological terms, it is
characterized as an exploratory-descriptive research with a qualitative approach,
whose data collection will be secondary and primary, with bibliographic data and a
semi-structured interview script. As a result, it's presented typical food, comunits
parties, religiosity, Italianity and family relationships as the main representative
elements of identity. These elements comprise everything that gastronomy
represents within these communities in the municipality of Nova Esperança do Sul,
and the relation between them that create the idea of belonging of those who live in
these places. Finally, trying to keep these cultural manifestations alive is a way to
preserve the cultural identity of the municipality of Nova Esperança do Sul and also
understand the reasons for the habits within each community. Keeping alive the
identity memory and accentuating the gastronomy, inherited by the immigrants that
constituted the communities of the municipality.
