Resumen
The white carrot (Arracacia xanthorriza) is an Andean tuberous root of high nutritional value. It has a short post-harvest life which limits its commercialization. The use of edible coatings based on biopolymers constitutes an alternative to maintain the quality of postharvest products. The objective of this work was to evaluate the effect of applying a 1% starch coating on postharvest quality during refrigerated storage at 10±1°C and 80±2% relative humidity for 14 days. The roots were washed and disinfected; immersion was used as the application method. A completely randomized design and a factorial arrangement of the treatments were used, considering the factors: coating (with two levels, with coating (CR) and without coating (SR)), and time (with two levels: 7 and 14 days). It was evaluated: the color, expressed as L*, a* and b*, the intensity or Chroma and the tonality or Hue° were estimated; the percentage of fresh mass loss (%FML); the percentage of dry mass (%DM); the content of total soluble solids (TSS); pH and titratable acidity (TA) expressed as a percentage of malic acid. The coating affected the variables L*, a*, Hue°, pH and TA, presented a positive effect on the color of the roots. It shows great potential for use, and keeps quality chemical variables acceptable. To increase its effectiveness could be combined with another biopolymer or additives. El apio criollo (Arracacia xanthorriza) es una raíz tuberosa andina de alto valor nutricional. Tiene una corta vida poscosecha lo cual limita su comercialización. El uso de recubrimientos comestibles a base de biopolímeros constituye una alternativa para mantener la calidad de los productos en la poscosecha. El objetivo de este trabajo fue evaluar el efecto de la aplicación de un recubrimiento a base de almidón al 1 % sobre la calidad poscosecha del apio criollo, durante el almacenamiento refrigerado a 10±1°C y 80±2% de humedad relativa durante 14 días. Para lo cual las raíces se lavaron, desinfectaron, y se les aplicó el recubrimiento mediante inmersión. Se empleó un diseño completamente al azar y un arreglo factorial de los tratamientos, considerando los factores: recubrimiento (con dos niveles, con recubrimiento (CR) y sin recubrimiento (SR)); y tiempo (con dos niveles: 7 y 14 días). Se evaluó: el color, expresado como L*, a* y b*, se estimó el croma y el hue°; el porcentaje de pérdida de masa fresca (%PMF); el porcentaje de masa seca (%MS); el contenido de sólidos solubles totales (SST); el pH y la acidez titulable (AT) expresada como porcentaje de ácido málico. El recubrimiento afectó las variables L*, a*, hue°, el pH y la AT, presentó un efecto positivo sobre el color de las raíces. Muestra un gran potencial de uso, y mantiene aceptables las variables químicas de calidad. Para aumentar su efectividad pudiera ser combinado con otro biopolímero o aditivos.
