The objective of this research project is to measure the level of innovation of companies
dedicated to the food sector in the city of Cuenca in order to analyze the greatest difficulties and
strengths of these companies in order to implement innovations. For this purpose, a model was designed
that will establish different levels of innovation management based on dynamic capacities of the
organizations. This model is based on dimensions and study variables from existing bibliography. For
the assignment of scores and weighting of the dimensions and variables established to evaluate the level
of innovation within each company, average values proposed by experts from the private sector and
academia involved in the food area will be used. Once the study dimensions and the variables to be
analyzed had been established, an instrument was designed for the collection of information based on a
structured survey, which managed to operationalize them and collect primary information that evaluated
the behavior of these variables within this business sector. With the application of this model, it was
possible to group and classify the levels of innovation within the city of Cuenca. The levels used are
based on the CMMI model and are five: initial, managed, defined, quantitatively managed and
optimized. In general, it could be demonstrated that the companies dedicated to food processing in the
city of Cuenca have a medium level of innovation, this is due to financial complications and
accessibility to state of the art machinery.
