Resumen
The current research topic consists in the Verification of Good Manufacturing Practices of food service, nutrition and dietetics of Eduardo Montenegro Hospital of the Province of Bolivar, 2013, this project has the features of encouraging the application of Rules and Procedures. Descriptive research and cross-section were used for this current work, whit techniques of field research and bibliography for which a survey was applied to food staff, nutrition and dietetics, 100% of the staff does not work with color tablets, 80% does not have adequate management of the process of food storage, there is a lack of manual of good manufacturing practices. In the analysis of critical points was detected that the reception installations, storage, production, service and cleanliness do not apply to current regulations, there are no preventive measures for not affecting the quality and safety of food. So it is recommended to put more emphasis on training and dissemination of current regulations of the Ministry of Public Health of good manufacturing practices by the hospital administration as well as maintenance of installations.
