Resumen
In 1975 Colombia was the third exporter of ornamental fish with approximately 12 million dollars per year, in 2012 Colombia descended to the 12th exporting country, one of the causes of this decline were high food costs, therefore proposed to create a food based on unconventional protein, to carry out an experimental study to determine the effect of the incorporation of biomass of Candida utilis and chachafruto flour as a protein source in the food elaborated for the feeding of angel fish (Pterophylum scalare) during the frying stage, in the methodology the kinetic behavior of Candida utilis was determined using powdered whey as a means for its production at laboratory scale, where the important variables were analyzed in a discontinuous fermentative process, monitored during 36 hours evaluating variables such as biomass concentration by direct count, in addition to the protein obtained, bromatological analysis was performed to formulate and manufacture an isolipidic, isoprotein, isomineral and isnoenergetic food. Three treatments were developed: Treatment 1 or control (0% Candida utilis and 0% Chachafruto), treatment 2 (5% Candida utilis and 15% Chachafruto) and treatment 3 (10% Candida utilis and 30% chachafruto), these treatments were supplied to 85 specimens corresponding to the fish Pterophyllum scalare, they were randomly distributed in 9 tanks with an average of 8 ± 1 individuals per repetition and they were provided the three treatments in triplicate, the efficiency of the food in weight gain and percentage of survival was valued. Results: There were significant differences (p<0.05) between treatment 3 and treatment 1 and 2 for TEC and GP. Conclusion: The effective non-conventional protein in a level of inclusion of 10% of Candida utilis and 30% of Chachafruto.
