Resumen
En esta investigación se describe la transformación de la uva Moscatel de Alejandría en vino y luego en vinagre a través del proceso de doble fermentación, primero una fermentación alcohólica con levadura autóctona y en segundo lugar una fermentación acética con inoculación de vinagre madre. El vinagre se elaboró bajo los métodos tradicional, alemán y cultivo sumergido, conducidos de acuerdo al Diseño Completamente Randomizado con tres repeticiones. Para determinar las características químicas y sensoriales de vinagre de vino blanco, se realizó la evaluación de pH de manera interdiaria por 30 días y las demás evaluaciones químicas se realizaron una vez finalizado el experimento. El contenido de acidez total y acidez fija para el método Alemán es de 2.6 g.a.a./100ml y 0.2 g.a.t./100ml, para el Cultivo sumergido 3 g.a.a./100ml y 0.6 g.a.t./100ml y para el método Tradicional 1.1 g.a.a./100ml y 0.3 g.a.t./100ml. Cada tratamiento fue evaluado sensorialmente utilizando una ficha de evaluación con panelistas especializados. Se evaluó sabor, aroma y color, características que permitieron determinar la aceptación del producto. Calificó en primer lugar el vinagre elaborado bajo el método Alemán, seguido por el método Cultivo sumergido y método tradicional.
