Efecto de la sustitución de grasa por quinua (Chenopodium quinoa) y chía (Salvia hispanica) en las características físico-químicas y sensoriales de chorizo de alpaca (Vicugna pacos)

Resumen
En esta investigación se evaluó las particularidades físico químicas y
organolépticas del chorizo de alpaca al haber sido sustituido un porcentaje de grasa de
cerdo por quinua y chía, sustitución que se hizo con el objeto de una mejoría en la
calidad nutricional de este producto de origen animal. La problemática a solucionar es
las altas cantidades de grasas saturadas que contienen los chorizos tradicionales que
perjudica la salud de sus habituales consumidores. Estimar los efectos de la adición de
porcentajes adecuados de quinua y chía para la formulación de chorizo con similares
características de un chorizo tradicional y que tenga aceptación, fue el principal objetivo
para desarrollar la presente investigación; por lo que se propone cuatro formulaciones
con distintas proporciones de grasa de cerdo, quinua y chía: una primera formulación
control (FC) con 20% de grasa, 0% de quinua y 0% de chía, considerada como
formulación tradicional; una segunda formulación (F1) con 15% de grasa; 2,5% de
quinua y 2,5% de chía; una tercera formulación (F2) con 10% de grasa; 6% de quinua
y 4% de chía; una cuarta formulación (F3) con 5% de grasa; 10% de quinua y 5% de
chía. Se realizó el estudio físico químico de los cuatro formulaciones (FC,F1,F2,F3):
capacidad de retención de agua (CRA), capacidad emulsionante (CE), pH y acidez de
la masa cárnica para chorizo de alpaca con quinua y chía, luego se efectuó una estudio
organoléptico a través de un panel semi entrenado y se determinó la muestra con mayor
grado de aceptación y posterior análisis proximal y determinación de fibra dietética;
brindando de esta forma una alternativa de elaboración de un chorizo saludable y
nutritivo. Tesis
