Elaboración y caracterización de una bebida alcohólica fermentada a base de quinua (chenopodiumquinoa) – Región Piura 2018

Resumen
Escuela de Ingeniería Agroindustrial y Comercio Exterior Piura Procesos Agroindustriales El siguiente trabajo de investigación aborda el proceso de elaboración de una
bebida alcohólica fermentada, aprovechando las propiedades de la quinua. El
proceso se compone de las siguientes etapas: malteado del grano, molienda,
extracción sólida – líquido, cocción, filtración, fermentación, maduración y
envasado. Los factores de estudio para el proceso fueron: tiempo de germinación
(24; 48 y 72 horas), tamaño de partícula (grano entero, grano triturado y grano
molido) y temperatura de extracción sólido - líquido (70; 75 y 80 °C). Se obtuvieron
27 bebidas con una concentración promedio de 5 % en volumen de alcohol. Las
condiciones óptimas del proceso fueron determinadas mediante el software
estadístico SPSS y la muestra más aceptada por un análisis sensorial, el cual fue
desarrollado por un panel de 10 personas previamente capacitadas, quienes
evaluaron con el mayor puntaje promedio en una escala de Likert a 5 puntos a la
muestra 18 (aroma: 4.5 puntos, sabor: 4.4 puntos, color: 4.3 puntos y aspecto: 3,9
puntos) dicha muestra corresponde a la siguiente combinación de los factores
estudiados: 2 días de germinación, triturado como tamaño de partícula y 80°C de
temperatura de extracción, Los análisis físico-químicos estuvieron conforme lo
estipulado en la norma tecina peruana NTP 213.014:2016 para bebidas
alcohólicas, obteniéndose para la muestra más aceptada un valor de PH de 4.00,
un porcentaje de extracto original de 7.5 grados plato (°P) y una medida de grados
alcohólicos de 5,2 grados Gay Lussac (5,2 °G.L) . El análisis de costos dio como
resultado el valor de venta para una cantidad de 750ml de la bebida alcohólica
obtenida el cual fue de 25 PEN. Se concluye que el producto es apto para el
consumo por cuanto cumple con las especificaciones de inocuidad de la norma NTP
213.014:2016.
