El consumo de productos libres de gluten incrementó notablemente en los últimos años debido al creciente número de casos de enfermedad celíaca, a razón de ello la cañihua (Chenopodium pallidicaule Aellen) ha ganado interés como alternativa para elaborar este tipo de producto frente a los cereales convencionales. El objetivo de la presente investigación fue elaborar galletas nutritivas libre de gluten a base de harina de cañihua, lactosuero dulce y almidón de papa. Para determinar la formulación optima en función a las características fisicoquímicas se utilizó un diseño de superficie de respuesta modelo Box-Behnken (DBB), con tres niveles siendo en total 15 formulaciones, las galletas obtenidas fueron sometidas a una evaluación de aceptabilidad a través de 102 panelistas (consumidores) en una escala del 1 al 9, utilizando la técnica de mapeo de preferencia y la formulación con mayor aceptabilidad se realizó la evaluación fisicoquímica, proximal y microbiológico. La formulación óptima de la galleta fue la formulación 12 con una proporción de 60 g. de harina de cañihua, 17 g. de lactosuero y 40 g. de almidón de papa con respecto a los componentes de humedad, ceniza, pH y acidez, el mismo que obtuvo mayor aceptabilidad. La galleta optimizada y con mayor aceptabilidad tiene la siguiente composición proximal: humedad de 2.53%, proteína 7.15%, grasa 15.09%, ceniza 1.72%, fibra 1.05% y carbohidratos 73.51%, mostrando un buen perfil nutricional, además que cumplió con el parámetro de calidad fisicoquímica y microbiológica con respecto a la normatividad vigente. En conclusión, la harina de cañihua es un recurso adecuado y aceptable para los consumidores celiacos y puede utilizarse para la producción de galletas.
