OPTIMIZACIÓN DE LA EXTRACCIÓN DE POLISACÁRIDOS DEL Linum usitatissimum Y Chondracanthus chamissoi UTILIZANDO UN DISEÑO SECUENCIAL.

El objetivo de este estudio fue optimizar la extracción del mucílago y la carragenina de las materias primas Linum usitatissimum (linaza) y Chondracanthus chamissoi (mococho), respectivamente, mediante un diseño secuencial con la finalidad de incrementar el rendimiento de polisacáridos y porcentaje de proteínas, también de obtener geles con alta viscosidad y excelente propiedades de textura. En primer lugar se hizo un screening (Plackett–Burman 8) para determinar cuáles de las variables utilizadas fue significativa en cada una de las extracciones. En el mucílago, las variables significativas fueron la temperatura (°C) y tiempo (h), mientras que para la carragenina fueron la temperatura (°C) y el pH. A su vez, la agitación magnética resulto ser el método de extracción más eficiente en la extracción del mucílago y carragenina. Luego, se optimizó el proceso de extracción de ambos polisacáridos con un Diseño Compuesto Central Rotacional (DCCR). Las condiciones óptimas de extracción del mucílago fueron temperatura y tiempo óptimo de 85–90 °C y 4,5–5,0 h, respectivamente, con pH 7,0 y relación de semilla: agua de 1:20, éstas condiciones aumentan el rendimiento (9.73 %) junto con el porcentaje de proteínas (12.5 %) y proporcionan una viscosidad de 1110.90 mPa.s y firmeza, consistencia, cohesividad e índice de viscosidad de 159.97 g, 568,48 g.s, 29.52 g y 14.48 g.s, respectivamente. Por otro lado, las condiciones óptimas en la extracción de la carragenina son una temperatura y un pH de 75–80°C, 8.5–10.5, respectivamente, con un tiempo de 3h y RAA de 1:40, siendo estos rangos de extracción los que maximizan el rendimiento (49.8 %), el porcentaje de proteínas (16.59 %), la viscosidad (2988.98 mPa.s) y las propiedades de textura.
