La eficiencia de la productividad avícola es negativamente afectada por las temperaturas y humedad ambientales altas (estrés calórico), hoy en día se enfrentan a numerosas técnicas que se han propuesto como posibles terapias para compensar las consecuencias del estrés calórico, como bajar de peso por la reducción del consumo de alimento, reducción del potencial de crecimiento e incremento de la mortalidad. El pH sanguíneo de un pollo de engorda Cobb en condiciones normales es de 7.40 – 7.45, en estrés este pH sube debido a un desbalance ácido – base. La adición de ácido cítrico en el agua de bebida hasta un pH entre 2.50 a 3.20 balanceó el pH de la sangre llegándolo a normalizar y no crear estrés calórico, además de superar el peso normal del pollo
