Efecto del propóleos y del aceite de Origanum vulgare sobre la vida de anaquel de carne de vacuno en una película comestible en base a carragenina

RESUMEN
Se evaluó el efecto del propóleos y del aceite de Origanum vulgare sobre la vida de
anaquel de carne de vacuno en una película comestible. Se obtuvo el extracto etanólico del
propóleos con etanol de 96° y el aceite de O. vulgare mediante el método de destilación
directa por arrastre con vapor de agua. Se trabajó con lonjas de carne de 45 a 50 g, los que
se introdujeron en la solución de la película comestible con el extracto de propóleos y
aceite de orégano al 0,01; 0,05 y 0,1% por separado. Se trabajó con dos controles: uno con
película de carragenina y el otro sin película. Las carnes con y sin tratamiento se colocaron
en recipientes de poliestireno, envueltos en cloruro de polivinilo y almacenados a 4 °C por
doce días. Se evaluó el pH, la capacidad de retención de agua y la pérdida de peso; el
recuento de bacterias aerobias mesófilas y levaduras mediante recuento en placa y
coliformes totales por el método del número más probable (NMP). Todos los datos se
analizaron mediante el ANVA diseño mixto, y las pruebas post ANVA de comparaciones
múltiples de Duncan y Dunnet, todas con un nivel de confianza del 95% (α= 0,05). Los
resultados muestran que a medida que incrementa las concentraciones de propóleos y
aceite de O. vulgare se mejoran las características físicos químicos y microbiológicos de la
carne con la película comestible en base a carragenina, donde la mayor concentración
evaluada mantiene la vida de anaquel de la carne hasta el sexto día.
