Este estudio tuvo como objetivo evaluar el efecto y la concentración eficaz del desinfectante hipoclorito de sodio en la eliminación de Listeria sp. y Escherichia coli. Se trabajó en dos superficies inertes: laminas de mayólica y tablas de madera en las que se estableció cuatro sistemas, tres experimentales (200ppm, 500ppm y 800ppm) y un sistema control (SSFE), para cada una de las bacterias. Las superficies se contaminaron sumergiendolas en tinas con las bacterias a una concentración de 3 x 108 UFC/ml, las superficies se secaron, se aplicó el desinfectante, se enjuago con ADE, después se tomó la muestra mediante la técnica de hisopado, se hicieron 3 diluciones respectivas , las cuales se sembraron en superficie por duplicado, fueron incubadas a 37º C por 48h, pasado este tiempo se hizo el recuento UFC/ml y evaluación de las placas a las horas 0, 2, 4, 6, 8, 10 y 12. Los resultados muestran que el hipoclorito de sodio a 500ppm y 800ppm tiene un efecto del 100% de inhibición en ambas superficies, para las dos bacterias, y a la concentración de 200ppm disminuye 4 ciclos logarítmicos en madera y 5 en mayólica para Listeria sp; para E. coli disminuye 5 ciclos logarítmicos para madera y 6 para mayólica.
