Efecto de la temperatura y tiempo de almacenamiento sobre la concentracion de fructooligosacáridos en yacón fresco (smallanthus sonchifolius)

El presente trabajo de investigación tiene como objetivo evaluar el efecto de la temperatura y tiempo de almacenamiento sobre la concentración de Fructooligosacáridos (FOS) y Humedad en yacón (Smallanthus Sonchifolius) fresco. Se empleó un diseño factorial 3 por 2 con 3 repeticiones para cada tratamiento. El yacón fue almacenado a 8, 20 y 30°C por un tiempo de 4, 7 y 14 días de acuerdo a como correspondió según el diseño experimental. Se analizó la humedad y el porcentaje de Fructooligosacáridos presentes en las muestras; así mismo se realizaron 3 repeticiones a cada una de las muestras a evaluar. Se pudo observar que el contenido de FOS en el yacón disminuye con forme aumenta la temperatura de almacenamiento, así mismo disminuye con respecto al tiempo de almacenamiento. Por su parte, el porcentaje de humedad disminuye tanto por efecto de la temperatura de almacenamiento (a mayor temperatura, menor porcentaje de humedad) y el tiempo de almacenamiento (a mayor tiempo de almacenamiento, menor humedad). Podemos concluir por ello en que las variables dependientes, temperatura y tiempo de almacenamiento (en días), así como la interacción de ambas, afectan significativamente al porcentaje de humedad y porcentaje de fructooligosacáridos presentes en el yacón y analizando los resultados, se recomienda una temperatura de almacenamiento de 8°C con una humedad inicial del yacón entre 80% y 90% para mantener por más tiempo el contenido de FOS.
