El presente estudio busca emplear residuos de café en aplicaciones de productos para panadería, como una forma efectiva para reducir el desperdicio y minimizar el impacto ambiental generado. El objetivo de este trabajo fue la determinación del efecto de los extractos de posos de café gastado (SCG) en la actividad antioxidante, color y características sensoriales de galletas dulces, para ello se extrajo las melanoidinas mediante precipitación con etanol, luego se incorporó en la formulación de galletas (cantidades de 1, 4 y 7 % p/p relacionadas con el contenido de harina) horneadas a una temperatura de 140 °C durante 15 minutos y por último se almacenó en bolsas herméticas. Para comparar el efecto de la sustitución de SCG (1, 4 y 7 %) en los parámetros de color de las galletas dulces, se empleó Análisis de Varianza (ANOVA) mediante el software Statgraphics, encontrando que las sustituciones de SCG son significativas (p<0.05). El método CATA y los mapeos por preferencia (Análisis de Correspondencia, Análisis de Componentes Principales y cluster), evaluaron 4 tratamientos (0, 1, 4 y 7 % p/p) encontrado que se logra la mejor aceptabilidad cuando la galleta se formula con 4 % p/p de sustitución y una actividad antioxidante correspondiente aun IC50 de 7.70 mg/ml. Se obtuvo un incremento de la actividad antioxidante (AOA) de hasta un máximo de 64 % para una sustitución del 7 % p/p sin afectar las propiedades de la galleta (sabor, textura y aceptabilidad general).
