O camu-camu é uma Myrtaceae encontrada principalmente na Amazônia Brasileira e Peruana, sendo considerada uma das maiores fontes de vitamina C até hoje. Entretanto, o interesse pelo fruto não fica restrito apenas ao teor dessa vitamina, visto que a quantidade de polifenóis, carotenóides e alguns minerais também é significativa. O cultivo natural do camu-camu é à beira de rios e igarapés, onde parte de seu caule permanece submersa em água durante o período de cheia dos rios Amazônicos. Entretanto, o Brasil vem tentando adaptar a cultura em ambiente seco (solo sem inundação), visto que os entraves da produção em ambientes alagados (solos inundados) são muitos. Assim, o objetivo desse estudo foi avaliar o teor de vitaminas (vitamina C e β-caroteno), minerais, polifenóis e antocianinas totais, ácido elágico (livre e total) e a capacidade antioxidante in vitro de frutos descaroçados e cascas de camu-camu cultivados em diferentes ambientes (seco e alagado) e em diferentes estádios de maturação (verde e maduro). Os frutos de ambiente seco apresentaram, estatisticamente (p<0,05), maior teor de vitamina C, polifenóis e antocianinas totais, assim como de ácido elágico total. Por consequência, demonstraram também maior capacidade antioxidante. O teor de β-caroteno não variou (p>0,05) entre os frutos analisados. Os teores de ácido elágico livre foram maiores nos frutos cultivados em ambiente alagado. O camu-camu cultivado em ambiente seco também apresentou maior teor da maioria dos minerais determinados. Dessa forma, o plantio do camu-camu em ambiente seco, como alternativa ao desenvolvimento da cultura e crescimento da produção, é viável em relação ao plantio em ambiente alagado, visto que as alterações identificadas apenas melhoraram as características do fruto. Em relação ao estádio de maturação, frutos verdes e maduros não apresentaram diferença (p>0,05) quanto ao teor de vitaminas. Entretanto, o conteúdo de polifenóis totais variou, sendo maior nos frutos maduros, que por consequência também apresentaram maior capacidade antioxidante. Em relação aos teores de ácido elágico livre e total, os mesmos foram maiores nos frutos verdes. Alguns minerais, como ferro, manganês e potássio, foram maiores nos frutos maduros, assim como magnésio, zinco e cobre, apresentaram-se em maior proporção nos frutos verdes. A casca, em relação ao fruto descaroçado, independente do sistema de cultivo e do grau de maturação, apresentou menor concentração de vitamina C, polifenóis totais, ácido elágico livre e total, bem como também menor capacidade antioxidante. Entretanto, os teores de β-caroteno e antocianinas totais foram maiores. Da mesma maneira, também foi observado na casca, menor teor de todos os minerais investigados no camu-camu. The camu-camu is a Myrtaceae mostly found in Peruvian and Brazilian Amazonia, is considered one of the greatest sources of vitamin C today. However, interest in the fruit is not restricted only to the content of this vitamin, since the amount of polyphenols, carotenoids and minerals also draws some attention. The cultivation of natural camu-camu is on the verge of rivers and streams, where part of its stem remains submerged in water during the flood of Amazonian rivers. However, Brazil has been trying to adapt the culture in a dry environment (soil without flooding), since the barriers of production in flooded environments (flooded conditions) are many. The objective of this study was to evaluate the content of vitamins (vitamin C and β-carotene), minerals, polyphenols and anthocyanins, ellagic acid (free and total) and in vitro antioxidant capacity of ginned fruit and bark camu-camu grown in different environments (dry and irrigated) and at different stages of ripening (green and ripe). The fruits of dry environment exhibited statistically (p <0.05), higher contents of vitamin C, polyphenols and anthocyanins, and ellagic acid total. Consequently, also showed higher antioxidant capacity. The content of β-carotene did not change (p> 0.05) between fruits analyzed. The content of free ellagic acid were higher in fruits grown in irrigated environment. The camu-camu cultivated in dry conditions also showed a higher content of most minerals determined. Regarding the maturity stage, green and ripe fruits showed no difference (p> 0.05) for vitamin content. However, the total polyphenol content varied, being higher in ripe fruits, which consequently also had higher antioxidant capacity. Regarding the levels of total and free ellagic acid, they were higher in unripe fruits. Some minerals, such as iron, manganese and potassium were higher in ripe fruits, as well as magnesium, zinc and copper, showed up in greater proportion in unripe fruits. The bark, in relation to the ginned fruit, regardless of the cropping system and the degree of maturation, showed lower concentrations of vitamin C, total polyphenols, total and free ellagic acid and also lower antioxidant capacity. However, the levels of β-carotene and anthocyanins were higher. Likewise, was also observed in husk, lower content of all minerals investigated in camu-camu.
