Monografía (Ingeniería Industrial) - Universidad Católica de Pereira, Facultad de Ciencias Básicas de Ingeniería, Pereira, 2018La presente investigación corresponde a una propuesta de implementación de las Buenas Prácticas de Manufactura de acuerdo a la Resolución 2674 de 2013 donde se realizó el diagnóstico inicial del restaurante en estudio, utilizando una herramienta del INVIMA, la cual dio a conocer el estado actual frente a las condiciones legales que se encuentra el restaurante frente a lo establecido por la Resolución estudiada, logrando identificar los puntos críticos donde se presentan las fallas que afectan la manipulación de los alimentos en los aspectos evaluados respecto a: edificación e instalaciones, equipos y utensilios, personal manipulador de alimentos, requisitos higiénicos y por ultimo saneamiento. Para dar cumplimiento a los objetivos investigativos planteados, se elaboró el plan de acción correspondiente. Abstract: The present investigation represents a new implementation way for the new Practices of Manufacturing According to Resolution 2674 of 2013, where we the made the initial restaurant´s diagnostic, using a tool from INVIMA, which allow us to know the actual state regarding the legal conditions our restaurant has established for the studied Resolution and being able to identify the critic points, where the fails are represented affecting the manipulations of the food in the evaluated aspects regarding edification, installation, equipment and utensils, of the personal food handlers, the hygienic requirements and finally sanitation to fulfill the research objectives we elaborated the right action plan.Universidad Católica de Pereira.
