The case study report presents an innovation developed by students of Industrial Engineering at the University of Santo Tomás, Tunja. It is a cutting tool for the feijoa fruit and the home production of pectin, with the objective of optimizing its shelf life and offering solutions to micro-enterprises dedicated to the preparation of gelatinous products. Feijoa is a delicate fruit with a short shelf life, and the specialized stainless steel cutting tool helps maximize its yield. The product was offered to a local microenterprise and focused on a B2B relationship to improve the production chain. In addition, feijoa pectin offers competitive advantages due to its natural consistency and 500-gram packaging. The tool also improves safety and efficiency in the kitchen by cutting up to four feijoas simultaneously.
