Cloud and IoT services help data storage employing computational resources in correlation with a remote internet network instead of software. Their interconnection between physical devices via the internet benefits real-time data sharing through sensors and adapters. This paper aimsto document the workshop entitled "IoT Meat Transport Monitoring", developed during the academic space Cloud Services and IoT, taught in the Specialization “Service Management in Information Technology” at the University of Santo Tomas. The laboratory was oriented to simulate the interconnection of sensory devices (Onset Hobo MX-100 Temp Sensor and Air Quality Sensor) used in the Azure IoT Central platform, collecting data and generating the deployment of reports. Similarly, critical concepts related to IoT were put into practice, considering the role played by the devices, the sensors and how they communicate with the cloud to exchange data. In projection, a template is being used consisting of two devices, responsible for measuring temperature, humidity, voltage, and location, among others, along with a panel or dashboard responsible for presenting the data collected in a friendly and easy to-understand way, to make decisions or execute actions. In short, the combination of these services helps the relationship between different devices in myriad functionalities, contributing
to the relationship between the analysis, processing and storage of data implemented in the infrastructure of physical devices.
