Colombian cattle farming becomes a great ally for butcher shops specialized in
matured meats. That is why it was decided to carry out a pre-feasibility study of a
butcher shop of matured cuts on the Colombian Caribbean coast, taking Sucre with
its capital, Sincelejo, as the place for said matured meat butcher shop and thus make
a leap in quality in its meat products. A survey was made in which Sincelejan were
asked where they would like the butcher shop to be and if they wanted and were
willing to pay more for meat matured. This gave space to continue with the
investigation, since 63.6% of the surveyed population was willing to buy this type of
product. For this reason, the technical, environmental, administrative and legal
studies shaped what the business would be and the requirements that must be taken
into account for the operation of the business. In the financial study it is found that
the business would be viable. It is concluded that people responded to the survey
thinking more with the desire, of wanting to buy better quality meat, than with what
they can really afford. Therefore, it is recommended to reduce the size of the project,
get a cheaper local, and carry out more in-depth studies to really determine if the
Sincelejan is willing to pay the value of the matured meat.
