130 P?ginas Recurso Electr?nico La mora de castilla (Rubus Glaucus Benth) es una polidrupa altamente perecedera. De acuerdo con lo anterior, los recubrimientos comestibles (RC) se han desarrollado con el fin de crear una atmosfera modificada pasiva que retrase la velocidad de senescencia, mantenga las caracter?sticas originales del tejido y contribuya a la reducci?n de p?rdidas en poscosecha. El objetivo investigativo, fue evaluar el efecto de RC compuestos y emulsionados en frutos frescos recolectados en el Ca??n del Combeima del municipio de Ibagu? en grado de madurez 5 sin da?os mec?nicos ni fisiol?gicos (NTC 4106). Las drupas tratadas (T1: Control, T2: 1.5% quitosano, 0.2% alginato y 0.2% glicerol, T3: 1.5% de quitosano, 0.2% alginato, 0.2% glicerol y 0.08% cera de carnauba. T4: 0.5% quitosano, 0.2% alginato y 0.2% glicerol, T5: 0.5% quitosano, 0.2% alginato, 0.2% glicerol y 0.08% cera de carnauba) se almacenaron durante 12 d?as a 3?1 ?C. Tiempo durante el cual se determinaron par?metros de calidad fisicoqu?micos, nutraceuticos, microbiol?gicos y sensoriales. Como resultado, T5 mostr? una menor evoluci?n del ?ndice de madurez y actividad respiratoria. Los compuestos bioactivos mostraron un incremento durante el almacenamiento siendo mayor en el control. Los RC disminuyeron la p?rdida de peso hasta valores del 11.46%. A pesar de la adici?n de quitosano en las formulaciones, no se observ? un efecto significativo en la inhibici?n del crecimiento de mohos y levaduras en los frutos. Finalmente, T4 fue el de mayor aceptaci?n por los panelistas semi-entrenados. ASBTRACT
The Castilla blackberry (Rubus Glaucus Benth) is a highly perishable drupetum. According to the above, edible coatings (EC) have been developed in order to create a passive modified atmosphere to delay senescence rate, maintain the original characteristics of the tissue and contribute to the reduction of postharvest losses . The research objective was to evaluate the effect of RC and emulsified compounds in fresh fruits harvested in Canyon Combeima of Ibagu? in five maturity stage without mechanical or physiological damage (NTC 4106). The treatments applied (T1 : Control , T2 : 1.5 % chitosan , 0.2 % alginate and 0.2 % glycerol , T3 : 1.5 % chitosan , 0.2 % alginate, 0.2 % glycerol and 0.08 % wax carnauba T4 . 0.5 % chitosan , 0.2 % alginate and 0.2 % glycerol , T5 : 0.5 % chitosan , 0.2 % alginate, 0.2 % glycerol and 0.08 % carnauba wax) were stored for 12 days at 3 ? 1 ? C. During this lapse of time physicochemical, nutraceutical, microbiological and sensory quality parameters were determined. As a result, T5 showed a lower rate in the maturity index and respiration rate. The bioactive compounds showed an increasing throughout storage being higher in the control. The EC diminished the weight loss up to 11.46%. In spite of incorporation of chitosan in formulations, was not found a significant effect on growth inhibition of mold and yeast. Finally T4 was the treatment showing the higher sensory acceptance by semi - trained panelists. INTRODUCCION 12
