107 p. La operaci?n de secado de granos de cacao es una etapa cr?tica en la postcosecha con
el fin de obtener chocolate de alta calidad. Durante ?sta, se debe garantizar que los
compuestos precursores del sabor y aroma se conserven hasta la etapa de tueste,
asegurando la inocuidad del producto. A trav?s de un abordaje te?rico y experimental,
esta investigaci?n evalu? el desempe?o t?rmico y fluidodin?mico de un secador solar
para granos de cacao (Theobroma cacao L) acoplado a diferentes sistemas de
almacenamiento t?rmico: dep?sito de agua en garrafas PET, dep?sito de parafina,
piedras volc?nicas y resistencia el?ctrica. El sistema sin acoples fue simulado mediante
un an?lisis en CFD evaluando par?metros de flujo y distribuci?n de temperatura. La
cin?tica de secado de los granos de cacao fue evaluada en condiciones de laboratorio a
temperaturas controladas de 30, 40, 50 y 60 ?C. La velocidad de secado aument? con el
incremento de temperatura; obteniendo valores de difusividad efectiva entre 1,0504 x10-
11 m2
/s y 3,1749 x10-11 m2
/s, energ?a de activaci?n de 30,187 KJ/mol y factor de Arrhenius
de 1,578 x10-6 m2
/s. El sistema auxiliar con parafina y la resistencia el?ctrica
contribuyeron a mantener la inercia t?rmica del secador durante las noches, registrando
temperaturas entre 5 y 11 oC por encima de la temperatura ambiente exterior. Los
resultados del an?lisis en CFD muestran que regiones de flujo con bajas fuerzas de
empuje y flujo estancado dan condiciones adversas para el progreso del secado. Para
promover un mejor flujo de aire al interior del equipo, se simula la incorporaci?n de un
ducto central de efecto chimenea para la salida del aire h?medo, junto con una
modificaci?n en la inclinaci?n del colector. Estas modificaciones logran mejorar la
homogeneidad del flujo de aire al interior del secador.

To obtain high quality chocolate, the cocoa bean drying operation is a critical stage in the post-harvest process. During this, it must be guaranteed that the flavor and aroma precursor compounds are preserved until the roasting stage, assuring the safety of the product. Through a theoretical and experimental approach, this research evaluated the thermal and fluid dynamic behavior of a solar dryer for cocoa beans (Theobroma cacao L) using different thermal storage systems: plastic bottles (PET) filled with water, a paraffin deposit, volcanic stones, and an electrical resistance. The system without a thermal storage was simulated by a Computational Fluid Dynamics (CFD) that evaluate the flow parameters and temperature distribution. The drying kinetics of the cocoa beans were evaluated under laboratory conditions at controlled temperatures of 30, 40, 50 and 60 ? C. As a result, the drying speed increases with the increase of temperature, getting values of effective diffusivity between 1.0504 x10-11 m2/s and 3.1749 x10-11 m2/s, Activation Energy of 30.187 KJ/ mol and Arrhenius factor of 1.578 x10-6 m2/s. The thermal storage systems that contributed most to maintain the thermal inertia of the dryer during the nights were the paraffin deposit and the electrical resistance, registering temperatures between 5 and 11 oC above the external temperature. Results of the CFD analysis show that flow regions with low thrust forces and stagnant flow give adverse conditions for
drying progress. To promote better air flow inside the solar dryer a central chimney-effect duct for the exit of humid was added, along with a modification in the inclination of the collector. The proposed modifications can improve the homogeneity of the air flow inside the dryer.
