Saraguro is a canton in the province of Loja, it is located about 2400 meters above sea level. It is characterized by a cold climate, where rain and fog shelter huge and rocky mountains that give shape to majestic landscapes, which are fragmented by the Paquishapa pass, a winding river that waters valleys, forests and fertile farms that cover uncountable amounts of corn. Corn is the main product of the area and the ancestral food resource and a very sacred element for its inhabitants that has even given a name to the toponymy of this fresh and charming place.Saraguro es un cantón de la provincia de Loja, se encuentra ubicada a unos 2400 metros sobre el nivel del mar. Se caracteriza por un clima frío, donde la lluvia y la neblina cobijan a enormes y rocosas montañas que dan forma a majestuosos paisajes, que se van fragmentando por el paso del Paquishapa, un serpentero río que riega valles, bosques y fértiles chacras que abarcan cantidades incontables de maíz. El maíz es el principal producto de la zona y el recurso alimenticio ancestral y elemento de connotación muy sagrada para sus habitantes que inclusive ha dado bautizo a la toponimia de este fresco y encantador lugar.
