Resumen
El objetivo que se planteó en esta investigación fue conocer el impacto de la modificación de la
ingesta alimentaria en el perfil nutricional de los pacientes con enfermedad renal crónica, que se
encuentran en terapia sustitutiva renal. Para ello se logró contar con una muestra de 75 pacientes
del centro de hemodiálisis (CH) Serdidyv, en la ciudad de Guayaquil, 33% de sexo femenino, con
una media de edad de 58 años. Se propuso a los pacientes, previa la aceptación de los responsables
del CH, una variación en la dieta regular, para que la fuente de proteína que prevalezca sea de
origen vegetal. A los pacientes que cumplieron los criterios de inclusión se los capacito sobre las
técnicas de cocción y la inclusión de alimentos a su dieta, además de realizarles una valoración
de la ingesta regular, mediante los cuestionarios de recordatorio de 24 horas y de frecuencia de
consumo. También se les realizó una evaluación antropométrica y de composición corporal,
mediante bioimpedancia y se complementó esta información inicial con los resultados de
exámenes bioquímicos regulares para determinar un perfil nutricional inicial. Luego de 60 días se
evaluó otra vez los parámetros seleccionados para comparar y establecer diferencias significativas
entre ambas medidas. En la valoración inicial aparecieron el 58% de los pacientes en condición
de sobrepeso u obesidad y clasificados con la escala de Ulibarri, el 32% con algún grado de
desnutrición, a más de un 73% calificados como de ingesta inadecuada, según el índice de
alimentación saludable (IAS). Al analizar las diferencias significativas entre los promedios de 9
variables seleccionadas, en todas las comparaciones se encontró valores de P menores a 0.001,
sugiriendo estos resultados un impacto de la modificación de la ingesta en su perfil nutricional The objective that was raised in this research was to know the impact of the modification of food
intake on the nutritional profile of patients with chronic kidney disease, who are in renal
replacement therapy. For this, it was possible to have a sample of 75 patients from the Serdidyv
hemodialysis center (HC), in the city of Guayaquil, 33% female, with a mean age of 58 years.
Subject to acceptance by those responsible for the LC, a variation in the regular diet was proposed
to the patients so that the prevailing source of protein would be of plant origin. Patients who met
the inclusion criteria were trained on cooking techniques and the inclusion of foods in their diet,
in addition to assessing their regular intake, through the 24-hour recall and frequency of
consumption questionnaires. They also underwent an anthropometric and body composition
evaluation, using bioimpedance, and this initial information was complemented with the results
of regular biochemical tests to determine an initial nutritional profile. After 60 days, the selected
parameters were evaluated again to compare and establish significant differences between both
measures. In the initial assessment, 58% of the patients appeared to be overweight or obese and
classified with the Ulibarri scale, 32% with some degree of malnutrition, and more than 73%
classified as having inadequate intake, according to the index of healthy eating (IAS). When
analyzing the significant differences between the averages of 9 selected variables, in all the
comparisons P values less than 0.001 were found, these results suggesting an impact of the
modification of the intake in its nutritional profile.
