Resumen
El Ecuador tiene una ubicación geográfica excelente y unas condiciones climáticas envidiables ya que es un país que tiene el privilegio de la producción y comercialización de banano alrededor del mundo. El banano es el principal
producto de exportación del Ecuador y representa un 20% (INEC, 2013) del
total de ingresos que recibe el estado.
La mayoría de productores exporta fruta fresca pero hay un porcentaje de desecho por el estricto control de calidad a la cual es sometida la fruta debido a esto hay dicho rechazo. La fruta no seleccionada muchas veces se comercializa para consumo animal o bien es desechada, y se estima que el rechazo va del 5 y 10% de la producción total del banano (Saldarriaga, 1982). Hoy en día el Ecuador produce frutas que son destinadas hacia los mercados de Estados Unidos y Europa; que son los principales importadores y exigen un control de calidad de la fruta que es sumamente estricto para la venta en el
mercado interno. En cuanto a las exportaciones de frutas tales como: (banano,
fresa, durazno, piña, mora, etc.), empieza con su producción en diferentes zonas geográficas donde son seleccionadas para ser embaladas y luego son exportadas. Del banano se derivan varios productos tales como: harina de banano, bananas deshidratadas, chips de banano y puré de banano.
En términos de producción el banano se encuentra en el puesto número cuatro
de los productos más demandados a nivel mundial, siendo competencia del arroz y trigo en términos de producción. Con fuentes de vitaminas A, C y D con un bajo costo y fácil de producir.
