Resumen
Carnival has been studied from different perspectives and contexts, since it is a worldwide celebration in the Christian world, each population conceives and celebrates it in different ways. From this diversity, particularities have been generated as in the case of the parish of Jadán where its inhabitants transmit through various culinary, artistic, ritual expressions, etc., the beliefs, customs and adaptations in this celebration. From this perspective, the following question was posed: how has the festival been redefined over time? To answer this question, the ethnographic methodology was used with snowball techniques, observation, field diary, photography, semi-structured interviews and recording. Then, with the analysis and interpretation of primary information, different actors, contexts and elements involved in the festivity were recorded. The results obtained allowed us to know the joy of the bodies through food, drink and clothing; as well as the resignification of memory through symbolic struggles (carnival goats and pucará) and the integration of religious symbols such as the cross and the shitana.
