| dc.description | Food allergy is a syndrome that includes various clinical entities that affect different systems and organs, it is a public health problem that affects the quality of life of consumers, and whose prevalence has increased significantly in recent years... There are more than 170 foods that can cause food allergies. The eight foods reported in the world and responsible for 90% of food allergies are peanuts, milk, eggs, wheat, tree nuts, soybeans, fish and shellfish. The objective of this research was to evaluate the most frequent food allergy and allergens in the Latin American population. The methodology used was a study with a descriptive documentary design. Original scientific articles and bibliographic reviews in English and Spanish with results of studies carried out in different Latin American countries in the last 10 years were included. Databases such as Scielo, Scopus, PubMed, ProQuest, Google Scholar, and Redalyc were used. The results showed that the most prevalent foods in Latin America are cow's milk, eggs and soybeans. It was concluded that the most recurrent manifestation in the Latin American population is skin infections, that the most reliable method to detect allergy to a food is by skin puncture and the prevalence of food will depend on the country of origin. | en-US |
| dc.description | La alergia alimentaria es un síndrome que comprende diversas entidades clínicas que afectan a diferentes sistemas y órganos, es un problema de salud pública que afecta a la calidad de vida de los consumidores, y cuya prevalencia se ha visto incrementada de manera significativa en los últimos años. Existen más de 170 alimentos que pueden causar alergia alimentaria. Los ocho alimentos reportados en el mundo y responsables de 90 % de las alergias alimentarias son cacahuate, leche, huevo, trigo, frutos secos, soya, pescado y mariscos. El objetivo de esta investigación fue evaluar la alergia alimentaria y alérgenos más frecuente en la población latinoamericana. La metodología empleada fue un estudio con diseño documental de tipo descriptivo. Se incluyeron artículos científicos originales y revisiones bibliográficas en inglés y español con resultados de estudios realizados en diferentes países de Latinoamérica en los últimos 10 años. Se utilizaron bases de datos como Scielo, Scopus, PubMed, ProQuest, Google académico y Redalyc. En los resultados se evidencio que los alimentos más prevalentes en Latinoamérica son la leche de vaca, el huevo y la soya. Se concluyó que la manifestación más recurrente en la población latinoamericana son las cutáneas que el método más fiable para detectar alergia a un alimento es por punción cutánea y la prevalencia de los alimentos va a depender del país de origen. | es-ES |
