Alimentos mínimamente procesados: pasado, presente y futuro

Resumen
LIMA Escuela Profesional de Ingeniería de Alimentos Ingeniería de procesos en la Industria de alimentos En el transcurso del tiempo la tendencia del consumidor revela la preferencia por alimentos de fácil preparación, naturales, seguro y de calidad, con el menor procesamiento posible, pero con un tiempo prolongado de vida útil. Los alimentos que cumplen tales requerimientos son los alimentos mínimamente procesados los cuales sufren alteraciones físicas a partir de su forma original sin que se les agregue o introduzca ninguna sustancia externa, pero con el problema de un tiempo de vida útil mínimo, por ello su conservación es un reto, las alteraciones principales que se presentan son físicas, fisiológicas, químicas y microbiológicas generado en las operaciones unitarias del lavado y corte. Por ello el objetivo de este trabajo es conocer la aplicación de procesos tecnológicos y uso de aditivos para controlar los factores alterantes y mejorar las características originales del alimento además de alargar su vida útil sin perder las propiedades nutricionales considerando que en la actualidad la aplicación de una sinergia de ambas trae mejores resultados y en un futuro se sigue estudiando para incluir también la importancia del empaque comestible para mayores mejoras, sobre todo en la extensión del tiempo de vida útil y menor procesamiento.
