Elaboración y evaluación del yogurt de tuna (Opuntia ficus indica) con sustitución parcial de leche de cabra (Capra hircus)

Resumen
La presente investigación tiene como objetivo elaborar y evaluar las características
fisicoquímicas, nutricionales y sensoriales del yogurt de tuna con sustitución parcial de leche de cabra. Para obtener el producto se procedió a caracterizar fisicoquímicamente la materia prima (leche de vaca y cabra). Se formularon tres tratamientos (T1= 30% leche de cabra / 70% leche de vaca; T2= 50% leche de cabra / 50% leche de vaca y T3= 70% leche de cabra / 30% leche de vaca), se procedió a realizar el filtrado cuya finalidad fue eliminar las partículas extrañas de la materia prima, se procedió a realizar la pasteurización a una temperatura de 85°C por 10 minutos, el objetivo de esta etapa fue reducir la carga microbiana para así obtener un producto de calidad; seguidamente la incubación se realizó a una temperatura de 43°C por un lapso de 5 a 6 horas. Las formulaciones se evaluaron a nivel fisicoquímico, microbiológico y sensorial a través de
una encuesta con escala hedónica de cinco puntos y un panel de 30 panelistas semi entrenados, donde el análisis de varianza determina que no existe diferencia significativa para sabor y textura en los tratamientos, pero según las medias destacó el T3 y el T1 respectivamente; en cambio para el olor y color si existe diferencia significativa por lo que se realizó la prueba de comparaciones múltiples de Tukey, y según las medias resultó el T3 como la de mayor aceptabilidad. Para los resultados estadísticos se utilizó el software IBM SPSS Versión 22 Como resultado destacó el T3 (70% de leche de cabra / 30% de leche de vaca) tanto a nivel sensorial como por su composición de 87% humedad; 5,10% carbohidratos; 3,92% proteína; 1,00% grasa; y 1,40% ceniza. Finalmente se formuló un producto lácteo rico en proteínas.
