Aprovechamiento de residuos de granada (Punica granatum) variedad Wonderful, para la extracción de biocompuestos mediante la aplicación de CO2 supercrítico

Resumen
Esta tesis se desarrolla en torno a la extracción y caracterización de biocompuestos no polares presentes en subproductos de procesamiento de granada var. Wonderful, específicamente de semillas; utilizando dióxido de carbono supercrítico (sc-CO2) a temperaturas entre 40 y 60 °C, y presión constante de 320 bar, en un intervalo de tiempo entre 1 a 5 horas, con un caudal de CO2 promedio de ~4,05 kg/h. A modo de comparación, se realizó la extracción con hexano utilizando un equipo Soxhlet que permitió obtener un rendimiento del 18,3524 %. Los extractos se analizaron mediante cromatografía de gases por detección de ionización de llama y espectrometría de masas. Se propuso un diseño experimental de rotación central compuesto con 2 ^ 2 + estrella o 2k para el análisis estadístico en el software MINITAB 18, con 13 tratamientos aleatorizados que se controlaron con la propuesta de estudiar el efecto de la temperatura y el tiempo durante la extracción supercrítica a una presión constante. La temperatura de 60 °C tuvo un efecto significativo (p <0.05) sobre el rendimiento alcanzado, con el valor más alto del aceite en 19,53 %, obtenido en un tiempo de 5 horas de extracción a 320 bar. El perfil de ácidos grasos mostró al ácido púnico como el ácido graso más abundante en el aceite de semilla de granada seguido de ácido esteárico y palmítico. En menor medida, encontramos al ácido oleico, lignocerico, araquidico, caproico y linoleico. En cuanto a los tocoferoles y esteroles se encontraron gamma y beta tocoferol, gamma y beta sitosterol, estigmasterol y alfa tocoferol (vitamina E) como componentes en mayor proporción. Tesis
