RESUMEN: El sobrepeso y la obesidad son las complicaciones más frecuentes de salud pública a nivel mundial. Se piensa que los organismos que habitan el colon pueden tener alguna relación con el exceso de grasa corporal y de Ácidos Grasos de Cadena Corta (AGCC); por esta razón, se ha comenzado a estudiar el efecto benéfico de la fibra dietaria sobre el perfil AGCC. El salvado de arroz es fuente rica en fibra y antioxidantes, que aún en el presente es poco utilizada para la alimentación humana, pero que por sus componentes es una buena alternativa para el desarrollo de alimentos funcionales. El objetivo de este estudio fue evaluar el efecto del consumo de un mazapán adicionado con salvado de arroz sobre la cantidad y tipo de AGCC de personas con sobrepeso y obesidad a través de un estudio cuasiexperimental, de mediciones repetidas. Los participantes fueron seleccionados del Centro de Desarrollo de Productos Bióticos del Instituto Politécnico Nacional en el municipio de Yautepec, Morelos, a los cuales se les entregó previamente una carta de consentimiento informado. Durante 8 semanas, los participantes consumieron un mazapán adicionado con salvado de arroz y fueron sometidos a evaluaciones antropométricas, bioquímicas, clínicas y dietéticas, así como a la evaluación del perfil de AGCC en muestras de heces antes de iniciar el consumo del mazapán, a las 4 y 8 semanas del tratamiento. Como resultados se encontró que las muestras de heces de los participantes mostraron mayores concentraciones de ácido acético, propiónico y butírico en la semana 4 (14.2 a 19.2 mMol/L, de 5.72 a 9.76 mMol/L y 2.46 a 2.95, respectivamente), en donde se tuvo mayor adherencia al consumo del mazapán y el cual tuvo correlación significativa en cuanto al incremento de las concentraciones de estos ácidos, al igual que el consumo de proteínas y grasas que cada uno de los individuos consumieron en su dieta. El estudio permitió visualizar que el consumo de fibra dietaria aportada por el mazapán adicionado con salvado de arroz, se correlaciona con un aumento en las concentraciones de AGCC; las cuales pueden ejercer efectos benéficos en poblaciones con sobrepeso y obesidad, siempre y cuando, mantengan una dieta equilibrada, puesto que ésta juega un papel importante en la disbiosis de la MI y en las alteraciones fisiológicas.
ABSTRACT: Overweight and obesity are the most frequent complications of public health worldwide. It is thought that organisms that inhabit the colon may have some relationship with excess body fat and short chain fatty acids (SCFA), for this reason has begun to study the beneficial effect of dietary fiber on the AGCC profile; Rice bran is a source rich in fiber and antioxidants, which is still little used for human consumption but because of its components is a good alternative for the development of functional foods. The objective of this study was to evaluate the effect of the consumption of an added marzipan with rice bran on the amount and type of SCFA of overweight and obese individuals through a quasi-experimental study of repeated measurements. Participants were selected from the Center for Development of Biotic Products of the National Polytechnic Institute in the municipality of Yautepec, Morelos, who were previously given a informed consent. For 8 weeks, participants consumed an added marzipan with rice bran and underwent anthropometric, biochemical, clinical, and dietary assessments, as well as the evaluation of the SCFA profile in faeces samples before starting marzipan consumption, at 4 and 8 weeks of treatment. As results, it was found that the stool samples of the participants showed higher concentrations of acetic, propionic and butyric acid in week 4 (14.2 to 19.2 mMol/L, from5.72 to 9.76 mMol/L and 2.46 to 2.95, respectively), where there was greater adherence to the consumption of marzipan and which had a significant correlation in terms of the increase in concentrations of these acids, as well as the consumption of proteins and fats that each of the individuals consumed in their diet. The study allowed to visualize that the consumption of dietary fiber contributed by the added marzipan with rice bran, correlates with an increase in the concentrations of SCFA; Which can exert beneficial effects in overweight and obese populations, provided that they maintain a balanced diet, since it plays an important role in MI dysbiosis and in physiological alterations.
