The goal of this work was to quantify the samples of brown rice, polished, flakes and flour by hydride generator coupled to atomic absorption (HGAAS). The digestion of the products (0,100 g) was performed in a microwave digester with 5 mL of HNO3 (65% v/v) in triplicate and the analysis by HG-AAS. Significant means were compared by the Tukey test at 5% significance. Brown rice was the product with the highest concentration of As (0,186±0,036 mg kg-1) and significant difference between the other evaluated products. However, all samples presented mean concentrations below the limit allowed by Brazilian legislation.
