Resumen
La presente investigación desarrolla una propuesta para la determinación de costos de fabricación de snacks (chifles, papa chips y camote chips) en una pequeña empresa industrial. El estudio es descriptivo propositivo, de diseño no experimental cuantitativo; para el análisis previo de los costos incurridos en el proceso, se utilizó documentos de la pequeña empresa industrial al 2021 e información directa de colaboradores. Se aplicó la ficha de recolección de datos y la entrevista estructurada. Los resultados evidencian la aplicación de métodos inapropiados para el costeo de materia prima, mano de obra y costos indirectos de fabricación, identificándose que la empresa costea sus productos de forma general y/o empírica; detallándose una propuesta de estructura de costos de fabricación. En conclusión, existe una inadecuada determinación de costos de fabricación de productos industriales en las pequeñas empresas peruanas, siendo importante contar con un costeo adecuado para que la empresa pueda evaluar su desempeño, analizar las variaciones en los costos de cada producto; con la propuesta de estructuración de costos posibilitara implementar a tiempo medidas correctivas para la mejora de gestión de costos y la toma de decisiones; de allí que la propuesta, implica sincerar el costo de los 3 productos analizados de S/ 0.80 céntimos por producto, de 50g con costos fijos unitarios y costos variables: que con la propuesta da el siguiente resultado; chifle (S/0.78), papa chips (S/ 1.03) y camote chips (S/0.77) en presentaciones de 50g cada producto; propuesta que permitirá a la empresa tomar otras medidas antes de producir.
