The Hoatzin is a unique South American herbivorous bird and the smallest vertebrate to have a fermentative crop, similar to the cow rumen. Like bacteria, fungi play an important role in foregut fermentative ecosystems by producing volatile fatty acids that are absorbed by the animal, thus contributing to the nutritional economy of the host.
