The purpose of this intervention project is to improve and diversify the diet of the inhabitants of
the community of Atucloma belonging to the Tarqui parish, through the use of agricultural and
livestock products with an emphasis on the use of products from family gardens and in
combination with products from other regions by applying traditional cooking methods and
techniques, such as boiling, sautéing, stewing, roasting and steaming. Undoubtedly, the
application of the products will motivate feeding on vegetables and foods that have ceased to be
used over time, which, in turn will reinforce a healthier and more balanced diet in children and
parents who make the preparations for consumption, and finally, food security potentiation will
be induced. The first chapter addresses the generalities of the community and its agricultural
and livestock production highlighting the products grown in the orchards and lands adjacent to
their homes, then the detail of raising animals for self-consumption and sale and subsequent
analysis of each product. With regard to the second chapter, it focuses on explaining the
gastronomy of the community, the culinary preparations applied with the use of the various
products obtained through agricultural and livestock practices, in turn the consumption of food in
their daily diet. Finally, the third chapter presents the technical sheets of the elaborations that
were made based on the products obtained from the orchards and crops among these are
recipes of both sweet and salt. The proposed recipe book has appetizers, main courses and
desserts.
