Resumen
This research project will present a proposal for revitalization of the gastronomy of
the Simiatug parish of Guaranda canton, province of Bolívar, knowing the
gastronomic variety of the parish through a bibliographic and field research, in
which the variety of agricultural products of the parish will be identified and the
main traditional recipes of the oldest parish of Guaranda will be compiled, where
the purchase and sale of grains, vegetables, fruits and animals take place, the
largest in Bolivar and one of the most important in the region.
So this research will allow to satisfy a part of the current population demand that
seeks to know and explore new cultures, traditions and daily activities of a locality;
and will also revive the gastronomy of the rural parish Simiatug, which is rich in
traditions and culture, and is also made up of a mostly indigenous population that
keeps all its features intact, although its inhabitants decrease with the passage of
time, since the new generations prefer to live in industrialized cities.
It is important to emphasize that the collection of traditional recipes of an ancestral
culture would contribute to the increase of knowledge of the gastronomic culture of
Ecuador; in addition to making known to more people, a small town that is full of
history and that can become a tourist power provided that its gastronomy is revived
mainly. Taking as an option the revitalization through written words that will be
disseminated, will be applied and will never be lost.
