El trabajo de investigación presenta como objetivo principal, estimar el efecto de la deshidratación osmótica en las propiedades fisicoquímicas, química y transferencia de masa entre la solución osmótica y los trozos de mashua (Tropaeolum tuberosum), con dos factores de estudio: Concentración de la solución osmótica (45°, 50° y 55 °Brix) y tiempos de inmersión (2, 4, 6 h) con tres ensayos y tres repeticiones, empleando pesos de 150 g de trozos de mashua por tratamiento. Para los análisis estadísticos se aplicaron el ANOVA y la prueba de Tukey (α = 0.05) entre los tratamientos. Los tratamientos se dieron a una temperatura constante de 40°C y espesor de los trozos de 4 mm, durante la deshidratación osmótica las concentraciones de la solución y el tiempo de inmersión, presentaron mayor efecto sobre las características fisicoquímicas, químicas y transferencia de masa para la solución concentrada a 45 °Brix en un tiempo de 2 horas.
