Efecto de la temperatura de almacenamiento, humedad y permeabilidad del envase en la estabilidad de los parámetros de calidad sensorial, fisicoquímica y microbiológica del pan de camote (ipomoea batata).

El trabajo de investigación, tuvo como finalidad determinar la vida útil del pan de camote (Ipomoea batata) una ecuación que estime la vida útil del pan de camote en anaquel, para ello se procedió a simular ambientes a temperaturas (25 °C y 35 °C), generando ambientes extremos con humedades relativas (87 % y 100 %) con dos tipos de envases (polietileno de baja densidad y polipropileno de baja densidad), observándose el efecto de la temperatura de almacenamiento, humedad y el tipo de envase para tener un mayor tiempo de vida útil en anaquel del producto. Se realizó una prueba de aceptabilidad con 21 panelistas y los análisis fisicoquímicos humedad, acidez titulable y pH estos análisis se realizaron a los 0, 2, 4, 6, 8 y 10 días. El diseño experimental usado para el análisis sensorial fue el DBCA (Diseño de Bloques Completamente Aleatorio), y para los análisis fisicoquímicos fue un DCA (Diseño Completamente al Azar) con arreglo factorial 2x2x2 con un nivel de significancia del 5% para ambos diseños. Se aplicó un análisis de regresión lineal para determinar la ecuación que estima la vida en anaquel del pan de camote : Días = 57,459 – 0,2269 (°C) – 0,07336 (% HR) - 3,4854x1019 kg/m s Pa (Permeabilidad), donde al reemplazar una temperatura de 20 °C, humedad de 47 % y una permeabilidad 9,06 x 10-19 kg/m s Pa, se estableció un tiempo de vida útil promedio de 17,89 días para el pan de camote, asimismo la hipótesis es verdadera ya que se observa que a mayor temperatura y humedad de almacenamiento el tiempo de vida en anaquel es menor.
