Influencia de la temperatura de secado en la degradación térmica del ácido ascórbico en el Aguaymanto (Physalis peruviana L)

El proceso de secado de frutas degrada la calidad tanto física (textura, color) como nutricional. El uso de indicadores de calidad, permite inferir acerca del estado nutricional de un alimento. El ácido ascórbico, es un indicador de calidad ya que al ser uno de los nutrientes más sensibles al tratamiento térmico aplicado en frutas, su retención asegura que otros componentes permanezcan sin alterarse durante el procesamiento. Por lo tanto, el objetivo de este trabajo de investigación fue evaluar la cinética de degradación de ácido ascórbico durante el secado por aire caliente de frutos de aguaymanto (Physalis Peruviana L). Se trabajó con el fruto de aguaymanto entero, con un índice de madurez de 7,67 estado maduro, con las siguientes características: Volumen = 5,06 ± 0,05 cm3; diámetro = 2,0 ± 0,05 cm; peso 4,21 ± 0,05 g; °Brix =13,50 y pH = 3,83. Se procedió al secado del producto, trabajando a tres temperaturas 60, 50 y 40°C, el tiempo de secado fue de 13, 18 y 24 horas respectivamente, hasta alcanzar una humedad de la fruta cercana a 15% para las tres temperaturas, obteniéndose aguaymanto (Physalis PeruvianaL) seco tipo pasas. Como el factor de mayor importancia es la concentración final de ácido ascórbico, se realizó un seguimiento de la degradación térmica del ácido ascórbico con el tiempo y la temperatura, cuantificando la cantidad de dicho factor en el transcurso del proceso de secado. Al inicio del proceso, la cantidad de ácido ascórbico fue de 48,7037 mg/100g de muestra, obteniéndose al final del secado 21,0872 mg/100g de muestra a temperatura de 60°C; 26,9002 mg/100g de muestra a 50°C y 31,3583 mg/100g de muestra a 40°C. Para el ácido ascórbico en el secado de aguaymanto las velocidades de degradación obtenidas son: K60°C= 0,0707 horas-1, K50°C= 0,0357 horas-1 y K40°C= 0,0203 horas-1; los tiempos de reducción decimal: D60°C= 32,5733 horas, D50°C= 64,5161 horas y D40°C= 113,6364 horas; además se obtuvo el valor Z de 36,9004°C, el valor Q10 de 1,8664 y la Energía de activación de 12,9069 Kcal /mol. Los resultados mostraron que la degradación de ácido ascórbico durante el secado sigue una reacción de primer orden.
