Estimation of value added to beef chain production in the regions of Los Ríos and Los Lagos

Economic participation in the Gross Domestic Product (GDP) of the agricultural sector is measured based on primary production, without considering forward and backward linkages of the different subsectors that make up the final production of this sector.
Faúndez and Lerdon (2011) take an insight into this subject, providing the basis to develop the same study in the Regions of Los Ríos and Los Lagos with the aim of studying the value chain of beef, developing different stages to finally reach the value added to the final price. Eight surveys were performed among medium and large producers of both regions and data regarding the cost and revenue of each producer was collected, this information was the basis of the study. The addition of value to the of beef chain production was obtained and the main representatives for each stage were identified, then they were stratified into primary sector, processing sector and distribution and marketing sector. For each stage, the most relevant prices and coefficients of technical and economic transformation were identified. The main costs of beef cattle production are feeding (17.3% of the total cost) and replacement cost (62%), which depends on the purchase price per kilogram. Regarding the value added of the value chain, 42% of the final price is formed by the primary sector of the chain. Given their important role, further investigations are needed in this area. La participación económica dentro del Producto Interno Bruto (PIB) del sector agropecuario, se mide en base a la producción primaria, no considerándose los encadenamientos hacia adelante y hacia atrás de los distintos subsectores que conforman la producción final del sector.
El estudio realizado por Faúndez y Lerdon (2011) permite un acercamiento a este tema y proporciona la base para replicarlo en las Regiones de Los Ríos y de Los Lagos, con el objeto de estudiar la cadena de valor de la carne bovina, desarrollando sus diferentes etapas, para llegar finalmente a la agregación de valor del precio final. Se trabajó con ocho encuestas realizadas a medianos y grandes productores de ambas regiones, recopilándose información de costos, ingresos y antecedentes descriptivos de cada productor, constituyendo la base del estudio. De esta información se obtuvo la agregación de valor de la cadena de carne bovina, identificándose los principales representantes de cada etapa. Estos fueron estratificados en sector primario, sector de elaboración y sector de distribución y comercialización, identificándose para cada etapa los precios más relevantes y los coeficientes de transformación técnica y económica.
Los principales costos de producción de carne bovina, corresponden a alimentación (17,3% del costo total) y costo de reposición (62%), que dependerá del valor de compra por kilogramo. En cuanto al valor agregado de la cadena de valor, se indica que un 42% del precio final es formado por el sector primario de la cadena. Dada su importante participación, se requieren más estudios específicos en esta área.
