The total bacteria count in bulk tank milk from six Milk Collection Centers (MCC), assigned to the Center of Agricultural Management of Río-Bueno was studied during the period 2002-2005, using information from this organization’s database. Patterns of evaluation applied to the MCC and a representative sample of MCC producers, were also studied during 2005. Tank milk was classified (≤200,000; 200,001-400,000 and >400,000 ufc/mL), based on the payment scheme of the industry. Deficient levels in the total bacteria count of the MCC were shown every year, with significant differences in this parameter (ufc/mL) between MCC. There was a close relationship between milk handling variables of the MCC and the bacteriological quality of bulk tank milk. At farm level similarity existed in the conditions of obtaining and handling the milk and no significant differences in the methylene blue reductase test were found among producers within MCC producers. Due to the total bacteria count, between 2002-2005, the six institutions studied obtained overall bonuses of $19,260,495, not obtaining available bonuses of $159,740,097 (Chilean pesos, December 2005).
Se estudió la evolución del Recuento Total de Bacterias de la leche-estanque de seis Centros de Acopio Lechero (CAL), adscritos al Centro de Gestión Agrícola de Río-Bueno, durante el período 2002-2005, mediante información obtenida de la base de datos de esta organización, y de pautas de evaluación aplicadas a los CAL y a una muestra representativa de productores por Acopio, durante el año 2005. Se estructuraron tres rangos de clasificación de la leche-estanque (≤200.000; 200.001-400.000 y >400.000 ufc/mL), basados en el esquema de pago de la industria. En los CAL se observó un comportamiento mayoritariamente deficiente en los recuentos microbiológicos durante cada año, existiendo además diferencias significativas en los recuentos microbiológicos (ufc/mL) entre éstos; registrándose una coincidencia entre las variables de manejo de los CAL y la calidad bacteriológica de la leche-estanque. A nivel predial existió similitud en las condiciones de obtención y manejo de la leche; coincidiendo, con que no existieron diferencias significativas en el test de reductasa (TRAM), entre los productores de cada acopio. De acuerdo a los recuentos microbiológicos, entre 2002-2005, las seis organizaciones obtuvieron en conjunto por concepto de bonificación sólo $19.260.495, dejando de percibir aproximadamente $159.740.097 (pesos de Diciembre de 2005).
