Resumen
Based on the assumption that the sugarcane agribusiness has undergone historical processes of change, along its trajectory in Brazil, we aim in this article to explain the general processes that permeate the changes, in the context of the productive restructuring of capital. Furthermore, we seek to show that the changes observed in sugar cane production are not an isolated fact, but a process of transformation of the structural logic of capital, in its accumulation process. On the methodological procedures, we seek to combine literature review, survey and analysis of secondary data, document analysis and empirical research. Among the results, we show that the increase in technology and science in the production process, the establishment of structures for the circulation of the produced goods and the reduction of the workforce, represent a reality historically financed by the State.
