Resumen
The implementation of a statistical process control, according to the results presented in the literature, when supported by the board of directors, managers and collaborators, promotes continuous improvements through the use of quality tools such as PDCA cycle, Ishikawa Diagram, Pareto Diagram, and Control Letters. The general objective of the CEP is to ensure that quality is built during the process, reducing its variability. In this work, the objectives were to study the salting process of a factory, to implement a process control, to collect data, to calculate control limits and with the data obtained using Ishikawa and Pareto for discussion and analysis of the results. With the data obtained and the use of these tools it was clear that 85% of the nonconformities is the cumulative sum of 2 problems, and the search for the root cause of these, using the Ishikawa Diagram pointed out that they come from the method used, environment, hand of work, material and the machine itself. It was concluded that with small adjustments in the machine, layout, equipment position and training of employees it is possible to improve the competitiveness of the company, increasing the quality, and productivity, reducing the variability of the process.
