This study aimed to evaluate, through a case study, the feasibility of spread and encourage the preparation of products from full use of food as a strategy to combat food insecurity and nutrition. The specific objectives were considered: hold workshops on the subject; produce six formulations, using the concept of whole food, consider the acceptance of the formulations by means of sensory analysis. The study was conducted at the School of Special Education Hands of Light - APAE, located in Reserva - PR. Consisted of 50 subjects (students), of both genders. There were four theoretical and practical workshops in order to demonstrate the importance of healthy eating and overall utilization of food. Six formulations were developed with reuse of parts of plants that tend to be normally wasted, but were sensorially acceptable, showing that it is possible to introduce these foods in schools and homes in Brazil. For sensory analysis of the products obtained, we chose affective sensorial method, which aims to assess the acceptability and preference of the tasters on a particular product. The theoretical and practical workshops have shown that nutrition education is efficient propulsion and dietary changes, extending also to the families of the students involved. In assessing the acceptability of the formulations, it was shown that the drinks and jelly vegetable peelings and fruit were the best formulations reached acceptability.
