Malting is the process of transforming barley into malt. During malt storage, quality manutence is fundamental, mainly avoiding changes in the humidity and enzymatic activity of the product. Throughout the storage changes may occur in malt as in it nitrogenous fraction. The objective of the present work was to evaluate the changes in malt nitrogen fractions in hermetic and conventional storage during six months. Freshly dried malt samples were submitted to hermetic and conventional storage for 30, 60, 90, 120 and 180 days in ambient condition. The samples were analyzed for total nitrogen, soluble nitrogen and Kolbach index. Total protein ranged from 11.3 to 13.2% for the conventional storage and 11.3 and 12.3% for the samples in hermetic storage, but it was statistical significant at conventional storage at 180 days. The soluble nitrogen contents increased in both storage systems, but conventional storage showed greater variability. The Kolbach index ranged from 40 to 57 in the hermetic system and 40 to 60 in the conventional one, but was not changed for both systems in the same storage period. The hermetic system maintained total proteins levels similar to inicial level, as well as contributed to lower oscillation of the soluble nitrogen values, being closer to those recommended in the literature.
