Resumen
Cereal bars are widely consumed due to the nutritional value of its components. However it is necessary to study the importance of mold and yeast analysis for this type of sample for its quality control. This study evaluated the total coliform counts, thermotolerant, molds and yeasts in cereal bars. Coliform total 35°C and
thermotolerant, were within the standard. All samples showed yeasts and molds, as there is no standard in the legislation for this type of analysis, we suggest a broader monitoring for this type of microorganism in cereal bars.
