dc.description.abstract | In the South region, Paraná is the state with the highest milk productivity, corresponding to 13.6% of the milk produced in the country. Within the state, Castro and Carambeí correspond to the cities with the highest productivity, being part of the milk basin in the Campos Gerais region. Therefore, this study aimed to diagnose or evaluate the quality parameters of refrigerated raw milk produced by 473 producers in the region of 10 evaluated municipalities, established by Normative Instruction nº 76/18 of the Ministry of Agriculture, Livestock and Supply. The physical-chemical parameters evaluated were fat, protein, anhydrous lactose, non-fat solids and total solids, and the microbiological parameters of Standard Plate Count (CPP) and Somatic Cell Concentration (SCC), in addition to analysis of residues of veterinary use (antibiotics), acidity neutralizers and restoratives (frauds). The results showed that 98.35% were within the standard established by the legislation. No producer had a positive result for analyzes characterized by fraud, it is concluded, therefore, that the milk, produced in the region, meets all the physical-chemical and microbiological parameters of the current milk quality and safety legislation. Considering the period evaluated and the sampling of producers, it is understood that the milk from the Campos Gerais region shows high quality, which is maintained regularly throughout the year, corroborating the national recognition of the dairy basin. | |
