Resumen
Due to the great consumption of pasteurized milk by the population of this region, it is necessary to evaluate the microbiological and physical-chemical quality of this product. The aim of this study is to evaluate some items related to the microbiological and physical-chemical quality of five (5) brands of pasteurized milk commercialized in the supermarkets in the city of Francisco Beltrão – Paraná. It was made the following microbiological analysis: quantification of total aerobic mesophilic micro-organisms, total and thermotolerant coliform and quantification of Coagulase positive Staphylococcus. The physical-chemical analysis were: determination of defatted dry extract (ESD), density, milk-fat content, the amount of water added, freezing point and protein content. The results obtained show that just one sample had its microbiological results substandard for Coliform at 45 °C and Total Coliform. It indicates prospective failures in the binomial time/temperature during the pasteurization or sanitization default procedures in the production line or postpasteurization contamination. Concerning the physical-chemical analysis, there were three samples that were substandard for the legislation patterns in at least one of the parameters analyzed. One of the analyzed samples can even show a possible fraud by addition of water, emphasizing the need of more supervision and standardization in the production process of this kind of food.
