Resumen
Good Manufacturing Practices are essential to ensure a quality product, safety for the manipulator and the consumer, as well as to ensure the acceptability and constancy in the search for a particular product. In the company under study there is the production of Biscuit like Honey Bread, which has great demand in the local market, but no parameters were found in specific legislation. In view of this, the company in question seeks to deploy the available resources to provide the customer with a suitable Biscuit like Honey Bread, implementing standards and quality controls. Through the available tools and criteria determined by the current legislation can characterize the product and process, determine the procedures and initiate the adjustment of critical and non-conforming points. Many goals were achieved during the follow-up period, but limited by time and cost. Initial checks were carried out, Standard Operational Procedures were elaborated, personnel training and corrective actions regarding the physical structure were carried out. There have been improvements through the corrective actions taken, especially with respect to the view of responsibility of the manipulators when the product, their work environment and even with regard to everyday actions that promote well-being inside and outside the company. Still on the latter, the need for gradual but constant improvements was fostered.
